Pickled Savoury Cucumbers
Bolognaise Sauce


Pickled Savoury Cucumbers

7 lb unpeeled Cucumbers(green) 
2 large Onions
3/4 cup salt 
5 cups Vinegar 
5 small cups Sugar
1 tblspn Mustard Seed 
2 flat tspn Tumeric
2 heaped tspn Celery Salt
ice cubes

Slice cucumbers and onions into circles. Put them into a 2 gallon plastic bucket or large
dish. Add salt, cover with ice cubes and press down with a weight. Leave 3 hours, drain 
and wash well twice in cold water and drain thoroughly. Put into large saucepan and add
vinegar, sugar, mustard seed, tumeric, and celery salt. Bring cucumbers etc almost to boil.
Bottle and then seal tightly when cold.

Bolognaise Sauce

2 Onions
1kg Beef Mince
1 can crushed Tomatoes (undrained)
1 cup Water
1 cup Wine (dry white or port is yummy too)
2 Tbls Tomato Paste
1 Beef Stock Cube
1/2 tsp Sugar
Sprinkle of Italian Herbs

Fry the onions. Add the beef mince and cook till browned. Add the remaining ingredients
and simmer. Pour over Spaghetti.

NB: The water can be increased to 1-1/2 cups and wine decreased to 1/2 cup if preferred.
Or can delete the water entirely and use 2 cups wine.
