Savoury Mince Bake

Ingredients:

1 large Onion                      pinch of Herbs
1 lb Mince (ground beef)    1 x 16oz can Tomato Soup
1 cup Macaroni                  grated Cheese
Breadcrumbs                      Salt and Pepper to taste

Method:

Chop onion and fry till brown. Add mince, salt, pepper, herbs and tomato soup. Simmer
for 3 quarters of an hour, adding a little water if necessary. Cook 1 cup macaroni 
according to directions in salted water. Drain and add to the mince mixture, mixing 
well. Turn into a flat dish, sprinkle with grated cheese and breadcrumbs. Place in oven 
or under griller until browned.

Garlic Lovers Delight

2 tbs Veggie Oil
2 cloves Garlic minced
1 Sweet Red Pepper chopped
3 cups sliced Mushrooms, (can use canned)
1 medium Onion chopped
1 stalk Celery chopped
1 Carrot chopped
1-1/2 lb. Mince Beef
1/2 cup Chili Sauce (I use the bottled Heinz)
1/2 cup Ketchup
Salt and Pepper

Topping:
2 lb. Potatoes cooked and mashed with 4 cloves minced garlic sauteed in 2 tbs. butter.
Boil 1/2 cup milk with 1 tsp. salt and 1/2 tsp. pepper. Add all to mashed potatoes and 
garlic mixture (the milk should be brought to a boiling point) and mash again.  Put aside
until meat mixture is ready.

Meat Mixture:
In pan heat oil and cook onion and garlic until tender. Add celery, red pepper, carrot and
mushrooms and cook for approx.  7 minutes or until all liquid has evaporated.  Remove 
from pan and then cook meat in pan until brown.  Drain off fat.  Add veggies back to pan.
Add chili sauce and ketchup and bring to a boil.  Reduce heat and simmer for 10 minutes. 
Season with salt and pepper.  Put meat mixture in 9 x 13 pan (or you can use loaf pans).  
Spread with potato mixture and sprinkle with paprika.  You can freeze at this point or if 
you wish to serve for dinner, bake at 350°F for 30 to 40 minutes or until meat mixture 
bubbles under the potato topping.
